Avocado and Chicken Tacos
Avocado and Chicken Taco’s
1. Heat 8 taco shells following packet directions.
2. Combine 3 cups of shredded BBQ chicken, 1/3 cup mayo and 1tbs lemon juice in a bowl and season with salt and pepper.
3. Peel and roughly chop 1 ripe avocado. Add to chicken mixture. Gently toss to combine.
4. Fill tacos with chicken mix, and your choice of baby cos lettuce, baby spinach or salad mix, ribboned Lebanese cucumber and chopped in 1/4 cherry tomatoes. ENJOY!
