Crunchy Cheddar Cheese Potatoes

CRUNCHY POTATOES WITH CHEDDAR CHEESE CRUMBS

About 6 desirees or however many you need for your family.

Olive oil cooking spray

½ cup fresh wholemeal bread crumbs

½ cup grated reduced fat cheddar cheese, finely grated.

1. Preheat oven to 180.c . Peel potatoes and half lengthways. Place a halved potato cut side down and slice evenly 2/3 the way through. Place chopsticks either side if you worry you will cut right through, this will stop your knife. Repeat all and place cut side down on a baking tray and spray with cooking oil. Bake for 50min until tender.

2. Combine breadcrumbs and cheese. Remove potatoes from oven. Sprinkle breadcrumb mixture over potatoes. Bake for a further 12 to 15mins until golden and crunchy. Serve immediately.
