Cucumber, Garlic and yoghurt Dip
Gino’s Weekly Recipe Cucumber garlic & Yoghurt Dip (tzatziki)
3 med leb cucumbers 1 1/2 cups natural greek yoghurt 3 cloves garlic crushed 1/2 cup mint leaves, finely chopped 2tbs dill sprigs 1tbs lemon juice 1tbs olive oil salt and pepper 1. Grate cucmbers and place in a colander. Sprinkle with salt, cover with a heavy plate in top and let drain for 15mins, then place in a bowl. 2.Add yoghurt, garlic, mint, dill, lemon juice, and olive oil, season with salt and pepper, mix untill combined and chill for 3 hours. Fantastic with lamb, chicken and grilled tomatoes! I would just love these with carrot and celery sticks as well.
