Mango, Cucumber & Chicken Rice Paper Rolls
MANGO, CUCUMBER & CHICKEN RICE PAPER ROLLS.
you will need;
4 crisp iceberg lettuce leaves 1 large lebanese cucumber 1 med ripe mango 2 cups cooked shredded chicken, (the breast of a cooked chook is perfect) 8 times 22cm wide rice papers 2 tbs sweet chilli sauce and extra to serve.
1. First prepare your filling. break iceberg into large bite size peices Cut lebanese cucumber into thin strips Cut the flesh from the mango and into long strips Shred your chicken into long strips place all on a bench on plates to work with. 2. Place shallow dish on a bench and dip the rice paper in for 20 to 30seconds until tender. Place on a damp cloth and in the centre arrange mango, cucumber ,chicken and lettuce, drizzle with sweet chilli sauce. Fold over one edge of the rice paper to cover filling, tuck in sides and roll up to enclose the filling. Place on a plate and cover with plastic, cut in half to serve with extra sweet chilli sauce.
