Roast jap Pumpkin Salad with Soy Dressing
1kg jap pumpkin with seeds removed and cut into 5cm thick wedges (skin on) your choice. Olive oil cooking spray Salt and Ground Pepper. 75gms salad mix 2 green shallots, thinly sliced. 2 tbs salad seed mix DRESSING 1/4 cup grape seed or rice bran oil. (I used olive oil was O.K) 2 tbs mirin 1 1/2 tbs soy sauce salt and pepper
1. Preheat oven to 200.c line baking pan with baking paper and arrange pumpkin skin side down in pam. Spray with olive oil spray and salt and pepper. Roast turning once for 25 to 30 mins until pumpkin is crisp at the edges and tender. Remove from oven and set aside to cool. 2. To make dressing put all ingredients in a screw top jar and shake well then set aside. 3. To serve arrange salad greens on a platter with pumpkin on the top. Shake soy dressing over and top with seeds and shallots. Ready to serve and beautiful colours of green and orange! Yum!
