Spanish Vegetable and Chorizo Soup

Spanish Vegetable and Chorizo Soup

2tbs olive oil

1 brown Onion, finely chopped

2 garlic cloves, finely chopped

1tsp paprika

2 med carrots, peeled and cut into 1cm dice

2 sticks celery, trimmed and thinly sliced

2 med zucchinis diced

1 small red capsicum, halved deseeded and diced

1 200gm desiree potato, peeled and diced

400gm diced tomatoes

5 cups chicken stock

1/2 cup Italian parsley leaves chopped

1 tbs lemon juice

salt and pepper

250gms chorizo sausage, diced

1. Heat 1 1/2 tbs oil in a large saucepan over med heat. Add onion and garlic and cook, stirring often over medium heat for 5 mins until onion is tender. Add paprika and cook for 1  min. Add carrot celery zucchinis capsicum and potato. Cook stiring often for 10 mins.

2. Add tomatoes and stock. Cover and bring to the boil. Reduce heat and simmer, stirring occasionally for 35 to 40mins until vegetables are tender. Add parsley and lemon juice. Season with salt and pepper.

3. Heat remaining oil in frypan over med heat. Add chorizo and cook stirring often for 3 mins until crisp. Transfer to a plate. Stir only half in the soup and ladle into bowls. Top with remaining chorizo to serve.
