Sweet Potato and Pear Soup

Sweet Potato and Pear Soup
25g butter 1 small brown onion finely chopped 750gms sweet potato, peeled and cut into 2cm cubes 2 firm pears peeled cored and cut into 2cm cubes 750ml chicken or vegetable stock 250mls pouring cream mint leaves to serve. 1.Melt the butter over medium heat and add the onions and cook 3mins until softened. 2.Add sweet potato and pear and cook a further 3 mins , add stock and bring to the boil and cook for about 20mins until the sweet potato and pear are soft.. 3. Cool slightly and place the soup in a blender and blend until smooth. Return to pan and stir in cream and reheat without boiling. 4. Ladle into bowls and serve with mint garnish.
