Winter vegetable Chirozo and Tomato Pasta

Winter vegetable, chorizo & tomato pasta

You will need;

1 tbs olive oil

250gms chorizo sausage finely diced.

1 small leek trimmed and halved lengthways and thinly sliced.

2 garlic cloves, finely chopped.

1 carrot, peeled and finely diced

2 celery sticks, trimmed and finely diced.

125gms small mushrooms, finely chopped

500gm jar of tomato base pasta sauce of your choice.

400gms bow tie pasta

½ cup thickened light cream

Salt and pepper to serve

Grated parmesan to serve. (fresh grated is so much tastier than dried)

  1. Heat oil in large frying pan over medium heat. Add chorizo, leek, garlic, carrot, celery and mushroom and cook stirring often for 15mins until the vegies start to soften. Stir in pasta sauce, cover and reduce heat to simmer for 15mins.
  2. Cook pasta with its packed directions until al dente. Stir cream into chorizo mixture and heat until hot. Drain pasta and return to the pan, adding chorizo mixture and season with salt and pepper. Toss to combine and serve with you parmesan cheese on the table.
