Gino’s Avocado, Spinach, Tomato & Bacon Salad

2 tbs olive oil 6 rashers rindless bacon, cut in half. 100gms baby spinach leaves 350gms cherry tomatoes or grape tomatoes, halved 2 medium ripe avocadoes, halved and thickly sliced lengthways. extra virgin olive oil for drizzling salt and ground pepper grilled sourdough bread to serve. 1. heat non stick fry pan over med high heat. Add oil and bacon and cook, turning occasionally for 4 to 5 mins or until bacon crisps. drain on paper towel, set aside to cool. 2. Arrange spinach , tomaotes, avocadoes and bacon on serving plates, drizzle with oil and season with salt and pepper. Serve with grilled sourdough bread. (Bread can be bought at the Long track pantry.) AVOCADOES! Did you know avocadoes contain fat, but its good unsaturated fat that is healthy for membranes around body cells. Avocadoes have the richest source of vitamin E than all other fruit and vegetables. Avocadoes are great size and value now.
