Balsamic red onion & Lamb Salad
Balsamic Red Onion & Lamb Salad 3 Spanish onions, thinly sliced. 2 garlic cloves 1/4 cup caramelized balsamic vinegar 2 1/2 tbs olive oil salt and ground pepper 1 lamb backstraps of lamb cut of choice about 1/2kg. 4 ripe tomatoes sliced 100gms salad mix leaves extra virgin olive oil for drizzling to serve. 1. Make your balsamic onions first by combining onions, garlic, balsamic vinegar and 1tbs oil in a bowl. Season with salt and pepper, toss and set aside for 15mins. Heat a non stick frypan over med heat, add 1tbs oil and once hot add onion mixture and cook for 15mins to 20mins until golden and soft. Set aside to cool. 2. Spray lamb with oil and salt and pepper. heat BBQ plate ot frypan and cook for 8 to 10mins, turning occasonally, set aside and cover with foil for 5 mins. 3. Thinly slice lamb. Arrange salad leaves on individual plates, add tomatoes and add sliced lamb. Top with your balsamic onions and drizzle with oil to serve. MMMMMmmmmm Beautiful salad.
