Honeyed carrot & cream cheese dip

Honeyed carrot & cream Cheese Dip 2 tbs olive oil 500gms carrots, pelled and diced 1 garlic clove, finely chopped 2 tbs honey 1/2 cup cream cheese 80% less fat one! salt and pepper Cucumber, celery sticks or crackers to serve. 1. heat oil in med non stick pan over med heat. Add carrots, garlic and cookfor 2 mins, stir in honey. reduce heat and cover to cook for 20mins until glossy and tender. Cool. 2. Place cooled mixture in food processor until smooth,add cream chesse and mix well,  season with salt and pepper. 3. Serve with celery sticks and crackers.
