Jen’s Best Baked Potatoes

There is nothing like a good roast and it has to have the fantastic baked potatoes to go with it or it’s just not complete.
I often get comments on my baked potatoes and here is my little secret…


I use the good old brushed potato although sometimes I use desiree and leave the skin on.
Step 1. Preheat oven to 200.c. Peel potatoes and cut into 5cm chunks. Place into a large saucepan and cover with cold water.
Step 2. Bring to the boil over medium heat and simmer for about 15mins until they are just tender when pricked with a fork.
Step 3. Drain them well and return them to the saucepan to quickly get all the moisture off them, shake up the saucepan to get them all roughed up so they bake up crunchy.
Step 4. Pour oil in roasting pan or use your beautiful pan juices. Make sure the oil or juices are very hot and drop your potatoes in and turn them all around so they are beautifully covered in oil.
Roast for about 30 mins and turn and cook another 30mins until you see them turn golden and crispy.
Season with a lovely rosemary salt and ENJOY!
