Low Carb Avo Salad

Low Carb Avo Salad 1 pun cherry tomatoes 2 Lebanese cucumbers 1 red or green capsicum 1/2 Spanish onion 1 or 2 ripe avocadoes 1 clove garlic 1 handful fresh coriander 1 grilled chopped chicken breast DRESSING zest of one lime 1/3 cup fresh lime juice about 4 limes 1/4 cup extra virgin olive oil 1 tsp seas salt 1/2 tsp ground black pepper 1/4 tsp cayenne pepper 1. Prepare all your salad items by cutting into desired size pieces and toss in a bowl with your chicken. 2. Combine your dressing in a jar and shake well before tossing through salad. 3. Leave in fridge for 1 hour for flavours to infuse. 4. Lovely as a meal served on a bed of salad mix or rocket.
