Raw Pad Thai

This Raw ‘Pad Thai’ is a fresh and extremely tasty easy meal.

You will need;

1 small Carrot

2 cups cabbage, shredded.

2 cups baby spinach

1 red cabbage finely sliced

1 bag bean sprouts

½ bunch Shallots

1 bunch Coriander

For your dressing;

1/3 cup rice wine or verjuice

2 limes juiced

2 tbs tahina

1 tbs honey

1 tbs fresh grated ginger (remember to store it in the freezer and just grate off what you need.)

1 tbs soy sauce


  1. Use a very fine mandolin to slice your carrots like noodles.
  2. Then place your carrot, baby spinach, shredded cabbage, capsicum, bean sprouts, shallots and coriander in a large bowl and gently toss to combine.
  3. Next put all your dressings in a bowl to combine. Drizzle over your fresh bright salad and gently toss. Serve with sliced almonds if you like. This will serve about 4 people and is a great side dish for chicken kebabs.
