Apple and Sultana Tarts
Apple and Sultana tarts
You will need
1.5kg granny smith apples (or you can use any others)peeled, cored and chopped
1/3 cup castor sugar
½ tsp ground cinnamon
¼ cup sultanas
6 sheets filo pastry
125gms butter, melted for brushing
Icing sugar for dusting
Vanilla ice-cream or cream to serve
- Combine apples, sugar and cinnamon in a large saucepan, cover and bring to the boil over med to high heat and stir occasionally. Reduce heat to low and simmer for 25mins until very tender. Stir in sultanas and leave to cool for 30mins.
- Preheat oven to 220.c and brush the holes in 8 large muffin circle in the pan.
- Place filo pastry on a bench and cover with a tea towel and then onto and damp tea towel. Brush 1 sheet with butter and then fold it into quarters, brushing between each fold. Then fold in half to form a rectangle, then gentle push it into the muffin pan hole to form a case. Spoon cooled apple mixture into each case and bake for about 20mins until the pastry is golden.
- Cool in pan for 10mins then gently pull out and serve on a plate dusted with icing sugar and a generous dollop of ice-cream.
