Spicy Roasted Potato Wedges with Avocado Dip

1kg Brushed potatoes

2 tbs olive oil

1 tbs tabasco sauce

1tbs ground cumin

1 tbs ground coriander

2 tbs lime juice

light sour cream to serve


2 med ripe avocadoes

2 tbs lime juice

salt and ground pepper

1. Preheat oven to 220.c. Line 2 baking trays with baking paper and scrub potatoes or peel and cut into wedges. Pat dry.

2.Combine oil, tabasco, cumin, coriander and lime juice in a large bowl. Add potatoes and toss well to coat. Placce skin side down in baking tray turn once for 50mins until crisp and golden.

3. To make your dip, peel deseed and chop avo. Place in bowl, add lime juice and mash with a fork until smooth, season with salt and pepper to taste. Serve with chips and sour cream. Mmmm I am hungry after typing that! x
